Restaurant of the Future
The Food Valley region is home to the Restaurant of the Future, a unique combination of theory and practice. A place to observe and record the behavior of consumers as they select and consume food and drink.
Although consumers say they want to eat fresh, healthy foods, their choices are still largely driven by taste and convenience. The Restaurant of the Future is unique in that it creates a real life research facility for large-scale studies of consumer choices. So far, there is very little scientific data available on the factors influencing these choices.
This makes the Restaurant of the Future an ideal place for companies to test their products and prototypes and to share their thoughts on the feasibility of new preparation, presentation and serving techniques. Both food service and retail businesses are welcome to try out their products.
Their studies may focus on particular variables, such as behavior, selection, ambiance, the effects of lighting, presentation, routing, taste, packaging and preparation. These are just a few of the countless variables that play a role in out-of-home eating and drinking behavior. The ambiance and serving and seating arrangements are flexible. They can be adjusted to accommodate practically any research question.
This joint venture of Wageningen UR, Sodexo, Noldus IT and Kampri Group is unique in applying state-of-the-art technology and research to the everyday human activity of eating and drinking.
