Is there such a thing as healthy croquettes? Yes there is – now that Paul Brugmans has launched his Falafun fibre croquette! Brugmans is a born entrepreneur who became known as the falafel take-out vendor who won over the snack-eating Dutch public with his chickpea balls and kebabs. Brugmans had more ideas up his sleeve, and a growing demand for healthy vegetarian products inspired him to develop a snack so healthy it would earn an IKB label – a Dutch label given to products that represent a health-conscious choice within a certain product category. FZ Organic Food Adjusts Production Process
After alarming stories appeared in the press about carcinogenic acrylamide in potato chips, FZ Organic Food in Wolvega immediately reviewed its own production process. Acrylamide forms when carbohydrate-rich foods, such as potatoes, are heated. Lowering the maximum baking temperature and increasing baking time helped reduce the chips’ acrylamide content. Wonderful news of course, but a sizeable percentage of the baked chips still have to be rejected due to dark color (which signals higher acrylamide levels). FZ Organic Food wanted to know what else it could do to reduce the amount of rejected chips. The manufacturer asked Food Valley’s Innovation Link, which matched it with TOP Consultancy in Wageningen. Ryorido produces amazake according to the traditional recipe. Literally translated, the word ‘amazake’ means ‘sweet sake’. Pap Eieren is a modern company with more than 30 years of experience in boiling, peeling and packaging eggs. Changes in European legislation forced the company to switch to a new preserving liquid. Peeze coffee
Peeze produces roasted coffee beans and roast ground coffee. Peeze was curious about the health effects of coffee and how to develop a product with fewer negative effects. Peeze put its questions to Syntens, which passed them on to the Food Valley Innovation Link. Sand: Horse milk
Horse milk has several benefits including an easing effect on certain skin conditions. Horse milk is usually marketed in capsules containing horse milk additives. Paardenmelkerij Sand, a horse milk producer, wanted to know how to develop pills made of 100% horse milk. Ronald Groen, Sand’s advisor from Syntens, put this query to Food Valley Innovation Link.
