Kick-off meeting Food Valley International
During the first Food Valley International meeting on March 18th in Wageningen, we focussed on ‘Taste’. For the participants of the meeting, about 75 in total, the 'kick-off' was an opportunity for a first encounter, not only with Food Valley but also with the Restaurant of the Future; a one of a kind facility in Europe with a unique blend of theory and practice in the everyday business of food consumption. The deputy Mayor of the City of Wageningen introduced the participants to Wageningen, City of Life Sciences. Wageningen, with its Wageningen University and Research Centre and many companies with an international focus, has inhabitants from about 171 different nationalities.
Koppert Cress amazed the participants with the wonderful taste of cresses. Koppert Cress specializes in cresses; seedlings of unique plants, which each have their own specific effect on the senses. Flavour, fragrance, feel or presentation, there is a cress for all. And the assortment is widening. Every year at least one new item is added to the collection of Micro-vegetables. It goes without saying that the program included international dishes, a guarantee for discussions while networking. A special contribution to those dishes, prepared by the chefs of the Restaurant of the Future, was delivered by a number of Orkney Food producers. Orkney food has an international reputation for excellence and refined taste. The Orkney Islands are located off the northern tip of Scotland, south of the Shetland isles. Renowned food producers, who combine a pride in their heritage with innovative thinking and a commitment to quality are located in that region. A region that is known for its clean and wonderful environment and superb raw materials.
